Home for the Holidays.

Thursday afternoon I finished my last final and started out for home. It feels great to not have homework and projects looming over my head for a whole month, but I am sure going to miss everyone! My first semester was better than I ever could have imagined. I love college.

Last night I put my baking pants (actually sweat pants and no make up)  on and helped my mom cook multiple desserts for a Christmas party.

We made cookies, brownies, chocolate eclair cake, strawberry jello cake, and probably something else I’m forgetting. Plus, my mom made it ALL gluten-free. She’s awesome.

This morning I started my day out with a beloved oatmeal pancake topped with banana slices and 1 tsp maple syrup.

Afterwards I grabbed my yoga mat for a quick workout with Jillian. I ran three miles on the treadmill yesterday and my hips were very tight this morning, probably because I’m used to running outside. Some yoga was just what my body needed.

Now I’m headed out to pick up my best friend and spend the day catching up and Christmas shopping. I’m so excited to see her!

A Hard Goodbye

So before I get to one of the hardest goodbyes I have to say before leaving for college ;) , let me just tell you that is has been a very long week. I enjoyed my job the whole summer until these past two weeks which have almost put me over the edge. A big thanks to my mom for listening to me vent {and occasionally cry} these past few days. While I have learned over the years that being a sensitive person is not such a bad thing, I really wished this week I was not very sensitive. Talk about some major self-confidence blown. Not the best way to end, but I am just going to remind myself of the good days, which thankfully was most of the summer. However, today was my last day and guess where my mom took me right after work?

That’s right, WHOLE FOODS!

I still had a gift card to WF my sister gave me for my birthday and I knew I needed to use it before I left. My mom and I spent three hours browsing the aisles and admiring all the different fruits and veggies. (And of course trying every sample!)

I love checking out each aisle and exploring foods I have never heard about. Somehow we always end up in the cafe area and can’t resist a little treat. Hey, I had a gift card.

We ended up getting dinner/a last-day-of-work celebratory dessert.

I got a HUGE quesadilla {with half a pound of cheese} and chocolate eruption cake. Some days just have to end in chocolate. {I hear cake helps erase long weeks.}

I was going to get a Beignet because I have always wanted to try one since I was a kid and saw a Scooby-doo movie where Fred ate a whole box of beignets. However, cake gets me every time. {Or maybe it’s the icing.}

Next time maybe. :)

So, it was pretty hard saying goodbye to my favorite store but, what a great way to end the week. Until next time, Whole Foods.

How do you relax after a particularly rough week?

Summer Time

Around this time of the year, I start to crave those delectable summer foods.

Smoothies, obviously.

Egg sandwiches for brunch.

Strawberries, pancakes, and chia seeds.

Cake. Okay, I crave that year round.

Nut butters + Apples.

A while back Artisana sent me some nut butters to review and so far, so good! While peanut butter will always be my favorite nut butter, I did like the coconut butter, macadamia butter, and the walnut butter (with honey).

And lastly and most importantly, Frozen Yogurt. Is there not a better snack for summer? Just looking at this picture makes me crave it.

New Balance Nicole turns one year old today!

I never thought I would like blogging as much as I do, but now I realize it’s a blast. :)

MIA Update

Hey Hey! Sorry for going MIA on y’all! Instead of boring you with the usual “life is too busy” blah blah I thought I would give you an update of what I have been doing for the past 2 weeks-ish.

A spring break trip with friends.

Exploring in the woods with friends.

Getting a cold. That, might I mention, just won’t go away.

Eating my favorite ice cream. (To help soothe my throat, obviously.)

Getting the graduation announcements ready. YIPEEEEEEEE! 47 days.

Chocolate mousse cake to end quite possibly one of the worst weeks.

The Hunger Games. Enough said. Loved the book, loved the movie.

However, you have to read the book before you see the movie. HAVE TO.

I have the next two books in the series on hold at the library. To bad there is an “estimated 33 day wait.”

And that’s that.

Make today a good one.

Sweet Tooth Therapy: Update #1

One of my “solutions” for my Sweet Tooth Therapy was to share more of what I am eating each day on the blog. Therefore, I am here today with a little update.

So, what I have been doing?

Experimenting with oatmeal. (More on this later)

Bumping up my protein intake with nuts, nut butters, lean meats, and oatmeal/cereals.

Creating meals with at least three food groups. The picture above has carbs (brown rice tortilla), protein (cheese, eggs), dairy (cheese), and vegetables.

Making desserts “healthier” and more filling. For example, my Fudgy Almond Joy Protein Cake and Chocolate Ice Cubes.

It hasn’t been super easy but I am taking each day at a time. Plus, I managed to go to the gym today which hasn’t happened in a while so it’s only onward and upward from here! :)

As many of you have heard, this week is Nation Eating Disorder Awareness (NEDA) week. It’s crazy to think of the epidemic it has become.

Lauren and Janae have had some great posts this week about it.

[I really recommend Janae's post if you are a runner/exerciser. I have often wondered how some people with eating disorder can still have such endurance. If only they knew what they are doing to the one and only body we are given.]

Pray, encourage, and support those you know going through an eating disorder. Also, if you have eating disordered behaviors seek wise counsel right away. An eating disorder is no joke and something that should not be taken lightly.  Hope and healing are possible and available for everyone. It’s all about taking the first step.

A Gluten Free Weekend

A couple of weekends ago, I spent the weekend with my sister who drove me all around Dallas to try many gluten-free goodies.

I wanted to share some of the places we went, so keep reading! I typed up half of this post earlier then it deleted itself so I am going to keep this short and sweet. :)

First stop, Wholesome Foods Bakery

Cake balls, granola bars, and pumpkin walnut muffins 

Everything was delicious (especially the muffins!) and highly recommended. If you are ever in Dallas, this should be on your list of places to eat.

Next was Patrizios for pasta!

(sorry for the not so stellar lighting!)

Needless to say, this was some of the best pasta I have had AND it was gluten-free! Patrizio’s has an entire gluten-free menu with a lot of variety…delicious.

We then stopped at Whole Foods to get some supplies for a night of baking!

Almond Butter  & Dark Chocolate Crispy Rice Treats (we used peanut butter instead of almond butter) 

Luscious Layer Bars  (I don’t even want to think about how many of these I consumed in two days!)

The next day we went to Costa Vida for the first time (YUM!) and also to a cupcake bar with gluten-free red velvet cupcakes (forgot to take a picture!).

Chipotle might just have some competition now….

To finish off the day, we went to a HUGE farmers market that is open every single day! It had so many goodies and was so inspiring to eat fresh food. :)

And that was our big gluten-free weekend! I have a pretty awesome sister. ;)

I would go with the pasta from Patrizios or any yummy gluten-free cupcakes. I love cake.

Fudgy Almond Joy Protein Cake

Yep, you heard me right. This single serving cake is perfect for that chocolate craving that happens everyday once in a while. Not only does it taste like an almond joy, it’s relatively heathy  also (and gluten free).

Fudgy Almond Joy Protein Cake

serves one hungry person

  • Two egg whites
  • 3 TBS unsweetened apple sauce
  • 2 TBS oat flour
  • 1/2 tsp baking powder
  • 1 packet NuStevia Sweetener (or any sweetener- sugar, splenda, truvia etc.)
  • 1 TBS unsweetened Cocoa powder
  • 1 TBS mini dark chocolate chips
  • 1-2 tsp unsweetened coconut (more or less according to your preference)
  • 1 TBS chopped almonds

Whisk all ingredients together in a large-bottomed bowl  EXCEPT chocolate chips, coconut, and almonds

Once the mixture is blended completely, stir in the almonds and chocolate chips.

Microwave on high for 2:30-4:30 minutes or once it looks cooked.

Flip onto a plate and top with coconut.

Fall in love.

Extra bonus about this delectable dessert (or snack) is that it is super filling! You know how I have been crazy hungry lately? Well, this suppressed my hunger. Instead of two desserts after dinner, which has been the norm lately, I only had this one. Score.

It’s so good it deserved two pictures. And a frame.

31 years.

My parents celebrated their 31st anniversary this past week. I know, they are AMAZING. I’ll never understand why God blessed me with such sacrificial and loving parents, but I ain’t complaining!

So instead of gifts this year (because I always have the hardest time finding them something), I decided to treat them to a nice dinner/dessert at home where I did the cooking and cleaning. (Okay, my mom did help a little, but that’s cause she is awesome, remember?)

Main Course:

Easy Parmesan Baked Tilapia

This truly was easier than I thought (I had a harder time de-frosting them!) and they both loved it. I did too :)

Side Dish:

Twice baked potatoes (sweet for my mom and I and good ‘ol white for the man of the house!). I simply cooked them in the microwave and added plain greek yogurt, a little bit of butter, cheddar cheese, a splash of milk, onions (we had no chives), salt, pepper, and garlic.

And for the best part…

DESSERT!

Ice Cream Sundae 4 Layer Chocolate Cake! (I knew with a name that long it had to be good)

Boy, oh boy was it delicious. My mom laughed when she saw it and said, “You made an entire cake for 3 people???”
It was gone in 2.5 days.

My dad told me he knew exactly what he wanted for his birthday cake in January. I felt pretty proud ;)

Digestive System

Why yes, that would be the digestive system on a cookie cake. Try not to be too grossed out.

I am taking Anatomy and Physiology this year and every group was assigned a system and well, my friend and I got the digestive system (which I secretly wanted!)

All though I am still not an expert on the digestive system, I can tell you one thing. Consuming all the candy on this cake is not good for your digestive system. Please don’t ask how I know. Why do you think we had a shortage of reeses for the liver even though we bought the family pack?
