Mother’s Day

Happy Mother’s Day!

Hope everyone enjoyed a day with their moms/grandmothers and reminisced on all their favorite memories.

The Cowgirl Sister and I got up early to make our mom some traditional “Breakfast in Bed.”

Crispy french toast with a Green smoothie (strawberries, banana, spinach, yogurt, and milk). Plus some roses from our bush. :)

After breakfast we headed off to church for a Mother’s Day special.

After church, we loaded up the bikes, stopped at Chicken Express, got 12 pieces of fried chicken + 6 biscuits + french fries + mashed potatoes and gravy, and headed off to the lake.

We enjoyed a picnic lunch just like old times (we used to always pick up KFC chicken and play at the lake when we were little) and then went on a bike ride on a bunch of new trails!

{Word for the wise…do not eat a months worth of fried food in one sitting then go on a bike ride. I am reminded why I like eating healthy foods more than fried.}

Once we got home, I gave my mom her gift which was an altered, antique book I made in art class that was kind of a scrap-book of my parent’s wedding. I worked really hard on it all year and was very exited to give it to her.

We are currently eating chocolate and fiesta salad and watching Tangled.

Tropical Smoothie

I was so excited for spring break that the first thing I made was a celebratory smoothie! Nothing like a good dose of Vitamin C to start the break off right.

I’ve been a bit “under the weather” lately, but I’m not really sure what with. I haven’t had any cold or flu symptoms but have had neck/headaches daily. Anywhere from my back, neck, behind my eyes, and temples have been feeling not so great.

So I’m hoping this smoothie is going to work its magic and cure everything! :)

If not, it looks like I’m back to drinking Tension Tamer Tea each night. (Which by the way, is so good!)

Tropical Smoothie

makes one serving

1/3 cup skim milk

1/3 cup  greek yogurt

1/4 cup orange juice

1 small banana

3 pineapple rings (about a half a cup of chunks)

1/2 cup crushed ice

1 tsp shredded coconut + some for garnish

Directions:

Place all ingredients in blender and mix until well combined.

And yes, I did make another batch of energy balls right after I drank this smoothie. Told you there would be plenty of baking over break.

Veggie Quesadilla Recipe

Hope you are enjoying this week of Thanksgiving! Have you started baking yet? We started yesterday and just had to sample half a little of the apple pie.

Yesterday, I started my first day off with a green monster….

Ahhh, its been way to long.

For lunch I made some quick and easy Veggie Quesadillas….

Chop your veggies- green peppers, tomatoes, zucchini, and squash 

Spice them up- garlic powder, black pepper, chili powder, cumin. I put a couple shakes of each :)

Shred lots of cheddar cheese and assemble on a large brown rice tortilla.

Cook for about 4-5 minutes on your George Forman grill (or regular grill or skillet)

Consume.

Yum, cheese will forever be the butter to my bread.

For dessert I have four of these little oat clusters

These have become a staple for me 1) they are super easy and I always have the supplies on hand 2) they are a healthy choice 3) they are awesome at taming the sweet tooth and have protein to fill you up.

Hey y’all, it’s Thursday! Hope your day is going great and that you are planning some great eats for the 4th of July!

I was going to try to do a WIAW (What I Ate Wednesday) but am very forgetful at taking pictures so all I would have been able to show you was breakfast and a snack. Oh well, there’s always next Wednesday….and the next.

 

Anyways onto some recent eats….

Green Monster. Slurrp.

Waffle with peanut butter and maple syrup

A Kid Clif Bar —> chocolate chip flavored! These things are so good. They remind me of a candy bar, and are great way to tame my sweet tooth :)

Well, today consists of packing, packing, packing. I am going to be gone for the next 2 weeks (yikes!) and will not be able to blog but please, Stay Tuned! This is my last trip for the summer so when I get back, I promise I will make up for the lack of posts.

Green Monster

How has your Wednesday been going?? I am loving this whole summer thing ;)

Today I wanted to show you how I make my Green Monsters (spinach smoothies).

Get ready for some tummy lovin’ goodness!

NBN’s Green Monster

  • 1 cup Milk of choice (I use regular skim milk)
  • A very large handful of spinach (washed first…it’s very dirty)
  • Half a banana
  • 4-5 medium strawberries (or fruit of choice…I usually go with sweeter ones like strawberries, pineapple, and peaches)
  • 2 Tbs gluten free oats
  • 1/3 cup crushed ice

Blend everything together on “liquefy” for about 20 seconds.

Enjoy the yummy, whole natural goodness!

*I add oats for extra protein and really, you can’t taste them…I like the texture and kind of cookie taste they add :)

*This make a very large serving (about 3 cups!), therefore if you are making it as a snack, you may want to put less milk or fruit.

Needless to say, it’s delicious and I always get a good burst of energy from it!!
