Gone with the Week

1. I am going to just admit it- I have already started drinking hot chocolate and listening to Christmas music. It is never to early to get in the holiday season mood.

2. We went to the rodeo last night! It was a lot of fun however, I covered my eyes when they roped the cows- so sad.

3. Here is yet another reason to eat more kale {and dark leafy greens}. Just do it.

4. I attempted a coffee ice-cube recipe with my dad’s leftover coffee pot and it turned out awful.

5. I was driving over the lake by my house the other night and got sentimental that it’s the last time to see it for a while. One time, when I had a really bad day, I drove across the lake at least five times and listened to worship music and prayed really hard. Nature is so soothing.

6. Everyone needs to go download the free C.S. Lewis quote of the day app. I love it.

7. My dad took me to the Local Diner after church today for our last Daddy/Daughter Date! I got a cinnamon roll the size of my head and some scrambled eggs. Yum. Thanks dad!

8. At our Whole Food’s field trip the other day, my mom and I picked up a container of hummus to try. I have already eaten half the container in two days- I definitely recommend this flavor!

9. I keep getting sad about leaving little Topy home when I go off to college so I couldn’t resist taking some cute pictures of him napping the other day. He starts off with a scowl, then sticks his tongue out, then tries to hide from the camera, then finally gives up. {Hopefully all you grammatical people didn’t just cringe at the amount of then’s I used incorrectly in that sentence.}

Blogging Bloopers + A Healthy Swap

As I was chowing down on my “yay its friday” nine cups of puppy chow* last week, I was thinking how important it is to incorporate “healthier” desserts in with the indulgent ones.

So, when I was looking in the pantry for what I was going to eat for dessert tonight, I made it a goal to make something healthier. (Ok, and I ate about a billion handfuls of animal cookies at work today while the kiddos were napping, so I really needed something other than more cookies.)

Enter the lone avocado left in the fridge.

Chocolate Avocado Pudding

It is delicious! I ate the whole serving and couldn’t taste the avocado one bit, although it sure helped make it creamy. So even if you don’t like avocados, you can still enjoy this pudding. (I recommend chilling it in the fridge ten minutes before eating.)

And then I was going to explain how easy this is for parents to make and give to their kids instead of high fructose, sugary Jell-O pudding….

But while I was pouring it into the bowl, I dropped the spatula and added 5+ minutes to clean up time. I blame it on rushing because I wanted to eat it right away.

However, I will say it anyway. This is super easier to make, eat, enjoy and add some extra nutrients to your dessert!

Delicioso.

 *no I did not eat all nine cups. For some reason though, whenever I have a long day at work, puppy chow is the first thing that pops in my mind when I get home and I have to make it.

I was going to try to do a WIAW (What I Ate Wednesday) but am very forgetful at taking pictures so all I would have been able to show you was breakfast and a snack. Oh well, there’s always next Wednesday….and the next.

A Kid Clif Bar —> chocolate chip flavored! These things are so good. They remind me of a candy bar, and are great way to tame my sweet tooth :)

Well, today consists of packing, packing, packing. I am going to be gone for the next 2 weeks (yikes!) and will not be able to blog but please, Stay Tuned! This is my last trip for the summer so when I get back, I promise I will make up for the lack of posts.

Topy kept giving me the sad face while I was packing. I’m going to miss him!

Cake Kick

I think I’m on a cake baking kick. You remember the cupcakes, right?

Well, yesterday I made gluten-free angel food cake al la this recipe.

It turned out pretty good, considering it was my first time to make it!

But whats angel food cake without the toppings??

Why the occasion you ask? It was my moms birthday!

Happy Birthday, Mom!! Your one of the most valuable people in my life and I thank God for our close and special relationship. Someday I hope to be half the mom and wife you are. (And if I am, I know I’ll do just fine in this thing called life.)

Then today, I made cupcakes for a friend, and of course had to sample one. (Ok, two.)

Let me just say, if life’s got you down…go decorate cupcakes! It’s so fun and relaxing, and you get to lick your fingers clean afterwards ;)

Oh and for the record, Topy liked the angel food cake :)
