Gone with the Week

1. I never got around to posting about it, but for our July 4th party, I made S’mores on a Stick. Super easy and fun to make/eat.

2. When we were in Colorado, we came across this house covered in licence plates. It was pretty awesome.

3. A childhood favorite. On our way home from Colorado, we stopped at Sonic and I got the kid’s meal grilled cheese.

4. Best gluten-free bread, hands down.

5. I got my first very own sleeping bag (to use for college and beyond). But to make it even sweeter, I got a mummy bag!! I am totally excited to use it.

6. Another childhood favorite: Krispy Kreme doughnuts. I dragged my friend there a couple of weeks ago because I always pass it on the way to her house and then crave doughnuts for a couple of days.

7. You know whats even more fun than watching the Olympics? Reading about the nutrition behind the athletes. {You are what you eat}

8. I made kale chips to go with our BLT’s tonight. I loved them but my goal is to improve them so my dad likes them also. :)

9. Guess what else I got for college? CHACOS! Pretty much everyone at the college I am going to wears them so I’m so happy I will fit in now. ;)

10. I never got around to blogging about it, but my friend and I made hope chests a couple of weeks ago! We turned ugly yellow boxes into beautiful boxes with just some paper and modge podge. It was so much fun and I love how they turned out- much better than either of us thought they would!

What were some highlights of your week?

I’m off to go grab some frozen yogurt with a friend! Have a splendid night.

Elk Brats

Colorado was amazing. I will live there when I am older! Being surrounded by mountains never felt so free (ironic, I know).

Many things occurred like rattle snake hunting, white water rafting, horseback riding, rock climbing, cowboy camp, cowboy church, bonfires + music, and some quality time with my cowgirl sister!

I also tried elk brats because now I can say I have had them! They were okay, but not my favourite.

Hopefully I will be back soon with some new recipes and stuff but with school starting Tuesday and starting a new job, things could get crazy! I will do my best though.

In the meantime, I wanted to share this post that I really liked. I think sometimes as “foodies” we can get a little too obsessed with eating healthy and never enjoy sweets or fast food. It’s called Orthorexia. Check it out here.

Better Breakfast Challenge: Day 4/5

So, I have really enjoyed this breakfast/workout challenge. It’s just what I needed to get me back into my groove :)

Last night I spent the night with my sister at her brand-new downtown apartment where we enjoy a gluten-free dinner, Soul Surfer and….a great breakfast to go along with my challenge!

BBC Day 4

2 slices gluten-free french toast (on Udi’s GF bread) plus a side of un-pictured eggs

Can anyone else not believe that summer is almost over? I have 3 weeks till school starts and am dreading dreading dreading it.

On the bright side though, I am ending my summer with a great adventure in Colorado with my cowgirl sister!! I leave tomorrow morning and am beyond excited. (So if you don’t see a post tomorrow, you know what happened. I will eat a creative breakfast but as for the workout…I’m going to count running from one airport gate to the other to catch my next flight as my final workout of the challenge.)

Happy Thursday!

America’s Greatest State (Part 1)

Hey bloggies! It’s good to be back and catch up on all your posts…boy, do you miss a lot when you’re gone a week. So this year for vacation my family went to COLORADO! We went to visit my sister who works on a ranch about an hour or so from Colorado Springs in a very small town. We had such a blast living in a cabin, horseback riding, hiking the great Rocky Mountains, white water rafting, smores making, and spending time in our favorite state. Remind me again how we end up in 105 degrees Texas? The weather was perfect there and I think I had a mini heat stroke coming back. Anyway I thought I would give you a recap in pictures of some of the stuff we did. Here goes!

So after a frustrating couple HOURS, the pictures on this post keep getting deleted when I saved it as a draft sooo you don’t have all the pictures I wanted to show you (no, don’t act relieved!).  However, I am doing a part two of my vacation which will consist of the eats!
So stay tuned…and pray all my pictures don’t get deleted on my part 2 post!
