Fall Moments

Today, I attempted to create Cait style pancakes.

I think they turned out pretty good, if I may say so myself :)

However, my pictures are still lacking compared to Cait’s! Guess that’s what you get with a $100 camera and a photographer with no experience.

YUM. Cait sure knows how to start the morning off great!

I didn’t have strawberries or peaches which would have made it even better. I used 2 Van’s Gluten Free Organic waffles, grapes, vanilla Chobani yogurt, and lots of pure maple syrup.

These gave me just enough fuel to go on a lovely fall walk. Gahhhh, I LOVE fall.

The sight of the trees and leaves.

The smell of the clean, crisp air.

And the feel of the cool and refreshing wind.

Sigh.

Why can’t fall last as long as Texas summers?

Happy beautiful fall morning! I’m loving this October weather. :)

So yesterday, I made a compromise and since I’m a horrible decision maker, I think I did a pretty darn good job deciding.

I made Pumpkin Chocolate Chip bread

Holy YUM. My sister used to work at a bakery and would sometimes be able to snatch a loaf of pumpkin chocolate chip bread for me and this bread brought back a flood of yummy memories.  I will be making this again this season. :)

Also, I made Chewy Pumpkin Spice Granola Bars

These turned out okay…I think they didn’t turn out quite like I though they would because I substituted dried bing cherries for dried cranberries and they are quite over-powering. Sad day. I will not be wasting it though, so I most likely will add it to my yogurt or cereal.

Overall, it was fun to make and eat. :) It has been so long since I have baked and I’m glad I had to the chance to awake my love for it yesterday.

As for my compromise, I [obviously] did make my pumpkin treats but instead of going to the movies, I had a friend come over to eat my pumpkin treats with me and watch a movie at home. That’s what I call a win-win  situation.

I love fall food.

Better Breakfast Challenge: Day 2/5

Hey friends! How was your breakfast this morning?? After possibly losing sleep last night thinking about what I should make for breakfast today, I created this beauty.

BBC Day 2:

1/2 cup Greek yogurt (sweetened with half a pack of truvia…I’m still developing a taste for plain yogurt), grapes, cantaloupe, and Love Grown granola

 

It’s the 32nd day here IN A ROW that it has been over 100 degrees. Thank you, Texas. I think swimming will be my exercise for today.

Remember

Remember when this used to be a food blog? You know, when posts came almost daily and recipes weren’t non-existent? Yeah, I kind of remember that.

My goal is to get back to all that soon!

I will leave you with this delicious sandwich I enjoyed for lunch and with the promise to try my best to get back to normal blogging.
